Safety Induction cooking is the safest way to cook as no heat comes directly from the hob, the hob is in fact heated only from the liquid with in the pan. This means that the hob never gets any hotter than 98 degrees. It has pan recognition and turns off the coking zone when the pan is removed. The hob has heat residual indicators to warn when hot. Induction technology Induction hobs work very differently from ceramic and gas. Although they look the same as ceramic under the glass they are very different. Induction hobs use electromagnetic sensors instead of elements which detect the pan on the hob, the friction caused be the magnet and pan causes the liquid inside the pan to heat up. The liquid within the pan then heats the pan which then heats the hob. The power is direct directly to the pan so no wasted energy is lost as with ceramic or gas where heat is lost from around the pan.
